Looking for something yummy to whip up and wipe away your Monday blues BUT at the same time is also somewhat healthy?
Well, look no further.
These banana fritters with blueberries are made with buckwheat flour (although you can substiture this for the regular variety should you wish to), and are both filling and packed with good-for-you ingredients.
Ingredients
2ripe bananas
1/4 - 1/2cupbuckwheat flour (or plain flour)
1/4cupblueberries
pinch of cinnamon(optional)
1tspcoconut oil for frying
Instructions
Mash bananas and then stir in the flour and cinnamon.
Add the blueberries and stir through.
Heat a non stick frying pan on high and add the coconut oil.
Reduce to a medium heat and spoon 1 tbsp of batter into frying pan per fritter.
Fry fritters until brown on both sides
Remove fritters and allow to cool a little before serving.
